A METHOD OF MAKING BREAD

The invention consists of a method of producing dough for baking a whole wheat bread or other similar whole wheat type foodstuff and includes firstly, soaking wheat kernels in an aqueous solution for softening the kernels. Secondly, the softened wheat kernels are broken down by a cutting/shearing process to form a preliminary wheat dough. This dough is then mixed with additional water to increase its water content. Finally, additional ingredients such as yeast, fat, sugar, salt and the like, are mixed into the dough to form a final wheat dough for baking bread. The invention extends to a method of producing bread and other similar whole wheat type foodstuffs by producing dough in accordance with the invention, and thereafter processing the dough and finally baking the bread.
