Among the earliest experiments with dietary fiber were those carried out by Ershoff, whose lipid experiments consisted of comparing, in rats, the effects of a fiber-free diet, the same diet plus 1% cholesterol and the fiber-free cholesterol diet augmented with 5–10% of a dietary fiber.
