A method for the biotechnological production of xylitol with the use of microorganisms, which xylose to xylitol can metabolize, wherein the method comprises the steps of,a) modifying the microorganisms, so that the oxidation of nadh by other enzymes than the xylose reductase is reduced or switched off;b) cultivating the microorganisms in a xylose and 10 - 40 grams per liter of sulfite salt substrate containing in an aerobic growth phase and an oxygen limited xylitol - production phase,c) increases, and recovering the xylitol from the substrate.
