This book relates the role of the student nurse in the field of nutrition and dietetics. The nurse is a vital member of the team in feeding the sick, for the acceptance or rejection of a diet, in many instances, depends on the nurse's knowledge of nutrition and her attitude toward it. The book is divided into 4 sections. The first deals with basic information on the principles of nutrition and discusses it on a world-wide basis. Food fadism and fallacies that are prevalent in the field of nutrition today are discussed, and ways of combating them are suggested. Section 2 on diet therapy contains all the most recent methods of dietary treatment in the prevention and treatment of disease; it emphasizes the fact that to be effective a diet must be followed, and to be followed it must be acceptable.
