The chemistry, properties, and applications of modified starches are described. Modified starches are used in the paper, food, textile, and corrugating and adhesive industries. Classifications include converted, cross-linked, acetylated, dydroxyethylated, hydroxypropylated, phosphorylated, cationic, grafted starches, and succinate derivatives of starch. -- AATA
