Contribution of cowpeas to nutrition and health

This article reviews ten years of research on cowpea processing and utilization by collaborators at the University of Georgia Agricultural Experiment station and the University of Nigeria at Nsukka. This project, sponsored by the United States Agency for International Development through the Bean/Cowpea Collaborative Research Support Program (CRSP), was initiated in 1981 and has been active since that time. It is one of the few CRSP projects which deal with post-harvest technology, food science, and nutrition
